  • 1 sheet store-bought puff pastry (thawed)
  • 1 cup blanched almond flour
  • ½ cup light brown sugar (packed)
  • ½ cup softened butter
  • 1½ tablespoons all-purpose flour
  • 1 large egg
  • 1 teaspoon pure almond extract
  • ¼ cup sliced almonds
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the almond flour, light brown sugar, softened butter, all-purpose flour, egg, almond extract, and a pinch of salt. Mix until just combined.
  3. Roll out the thawed puff pastry on a floured surface into an 11×11 square and cut into twenty-four 2×2 inch squares. Place each square in a greased mini muffin pan.
  4. Fill each pastry square with about one tablespoon of the almond filling and top with sliced almonds.
  5. Bake for 10-15 minutes until golden brown. Allow to cool slightly before dusting with powdered sugar.
