Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together dry ingredients: flour, baking soda, baking powder, spices, and salt.
  3. In another bowl, mix wet ingredients: pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  4. Combine wet and dry mixtures gently until just combined—lumps are okay!
  5. Prepare the streusel by mixing flour, sugars, cinnamon, and cold butter until crumbly.
  6. Fill muffin cups three-quarters full with batter and top generously with streusel.
