  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F. Grease a 9” square baking dish, lining it with parchment paper for easy removal.
  2. In a sauté pan, boil the fresh apple cider until reduced by half (about 5 minutes). Measure out ¾ cup after cooling slightly, whisking in the diced butter until melted.
  3. In a separate bowl, mix eggs, sugars, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt. Combine with the boiled cider mixture.
  4. Gently stir in flour until just mixed. Pour batter into the prepared dish.
  5. Bake for 22-25 minutes until golden brown; a toothpick should come out clean.
  6. Cool slightly before brushing melted butter on top and sprinkling with a cinnamon-sugar mixture.
