  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream (room temperature)
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • Tangzhong (from recipe above)
  • 6 tablespoons unsalted butter (room temperature)
  • 1/2 cup unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 teaspoons ground cinnamon
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream
  • 2 tablespoons apple butter

Instructions

  1. Prepare the filling: In a saucepan over medium heat, mix diced apples, apple butter, sugar, water, lemon juice, cinnamon, vanilla extract, and salt until apples soften.
  2. Make the dough: Combine warm water and yeast in a bowl until frothy. In another bowl, whisk flour, sugar, and salt. Mix dry ingredients with milk, cream, egg, vanilla extract, and tangzhong; knead until smooth.
  3. Let it rise: Place dough in a greased bowl covered with a damp cloth; let rise until doubled (about an hour).
  4. Roll out & fill: Roll dough into a rectangle, spread softened butter on top, sprinkle brown sugar and cinnamon, then add apple filling before rolling up tightly.
  5. Second rise & bake: Slice into rolls and place in greased pans; let rise for another 30 minutes then bake in preheated oven until golden brown.
  6. Frost & enjoy: Prepare cream cheese frosting by mixing softened butter and cream cheese; gradually add powdered sugar and heavy cream until smooth. Drizzle over warm rolls.
