  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed, for streusel)
  • 8 oz cream cheese (softened, for frosting)
  • ¼ cup unsalted butter (softened, for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. For the streusel topping, mix flour, brown sugar, oats, cinnamon, and salt in a bowl; cut in cold butter until crumbly. Chill while preparing the batter.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream together softened butter and granulated sugar until fluffy; add eggs one at a time followed by vanilla extract.
  5. Gradually mix dry ingredients into wet ingredients alternating with milk until just combined.
  6. Fold in diced apples carefully.
  7. Fill muffin cups two-thirds full and sprinkle with chilled streusel.
  8. Bake for 22–25 minutes until a toothpick comes out clean; cool before frosting.
  9. For the frosting, beat cream cheese and butter until smooth; gradually add powdered sugar, vanilla extract, cinnamon, and salt until creamy.
