  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted) for topping
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar for filling
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornstarch
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs

Instructions

  1. Prepare the crust by crushing Lotus biscoff cookies into fine crumbs and mixing with melted butter. Press firmly into a springform pan.
  2. For the apple filling, toss apple slices with brown sugar and cinnamon. Let sit to release juices.
  3. In a bowl, combine softened cream cheese, granulated sugar, Greek yogurt, vanilla extract, and spices until smooth. Add eggs one at a time.
  4. Layer half of the cheesecake filling over the crust followed by half of the apple mixture; repeat with remaining filling and apples.
  5. Sprinkle the streusel topping over the cheesecake before baking.
