  • 12 thick-cut slices of brioche bread (or 12 dried-out brioche rolls)
  • 1 3/4 lb apples (peeled and diced)
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1 cup milk
  • 1 cup heavy cream
  • 4 eggs (at room temperature)

Instructions

  1. Preheat the oven to 350F and grease your baking pan.
  2. In a saucepan over medium heat, melt butter, then add flour and apple pie spice. Stir in brown sugar and diced apples; cook until softened.
  3. Strain any excess juice from the apples and set aside.
  4. In another pan, combine milk, cream, sugar, cinnamon, vanilla extract, and salt over medium-low heat until smooth. Whisk in eggs one at a time.
  5. Cut the brioche into cubes and layer in the prepared pan with apple filling between layers.
  6. Pour custard over the bread mixture ensuring all pieces are soaked.
  7. Bake for about 35-40 minutes until golden brown on top but slightly wobbly in the center.
  8. Allow to rest before serving warm.
