  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides; remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste; cook for an additional minute. Add a splash of beef broth to deglaze the pot.
  4. Return beef to the pot; add remaining broth along with carrots, potatoes, parsnips, and celery.
  5. Season with thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil then reduce heat to low. Simmer for about 2 hours or until beef is fork-tender.
  6. Adjust seasoning as necessary; remove bay leaf before serving.
