  • 2 large chicken breasts
  • 4 ounces cream cheese
  • 3/4 cup heavy cream
  • 4 cloves garlic
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 8 ounces sun-dried tomatoes
  • 3/4 cup fresh spinach
  • 3/4 cup mozzarella cheese

Instructions

  1. 1. Preheat your oven to 400°F (204°C).
  2. 2. Slice chicken breasts horizontally to create thin fillets and arrange them in a baking dish. Season with salt, pepper, and half of the minced garlic.
  3. 3. In a mixing bowl, beat cream cheese and heavy cream until smooth. Stir in remaining garlic, onion powder, paprika, Italian seasoning, salt, pepper, Parmesan cheese, and half of the mozzarella.
  4. 4. Spread the cream mixture over the chicken and top with sun-dried tomatoes.
  5. 5. Cover with foil and bake for 20 minutes.
  6. 6. Remove foil, stir in spinach, and sprinkle remaining mozzarella on top. Bake uncovered for another 10 minutes until bubbly.
