  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms using a damp paper towel and halve larger ones for even cooking.
  3. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, black pepper, and red pepper flakes if desired.
  4. Toss the mushrooms in the marinade until well coated and let sit for about 5 minutes.
  5. Spread the mushrooms evenly on the prepared baking sheet without overcrowding.
  6. Roast in the preheated oven for 20–25 minutes, stirring halfway through until tender and browned.
  7. Garnish with fresh parsley before serving.
