  • 1 ½ pounds boneless skinless chicken tenderloins

  • ¾ cup all-purpose flour
  • ½ cup cornstarch
  • 1 large egg (room temperature)
  • 1 tablespoon Sriracha
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • â…› teaspoon cayenne pepper (optional)
  • 2 cups panko breadcrumbs (plain)
  • Canola oil (for frying)
  • Chopped parsley (for garnish)

Instructions

  1. Prepare the sauce by whisking together mayonnaise, Thai sweet chili sauce, Sriracha, and honey in a bowl. Adjust the spiciness as desired.
  2. Marinate the chicken tenders in buttermilk for at least 15 minutes to enhance flavor and tenderness.
  3. Set up your breading station with flour mixed with cornstarch and seasonings in one bowl, beaten egg with Sriracha in another, and panko breadcrumbs in the last.
  4. Coat each marinated chicken tender first in the flour mixture, then dip into the egg mixture, and finally roll it in panko breadcrumbs.
  5. Fry the breaded tenders in hot canola oil until golden brown and crispy on both sides.
