  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon kosher salt
  • 1 & 1/2 teaspoons cinnamon
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon cardamom (optional)
  • 1 teaspoon vanilla
  • 1 tablespoon milk (for brushing on pie)
  • 1 tablespoon raw sugar (for topping pie)

Instructions

  1. Preheat your oven to 425°F.
  2. Prepare the apple filling by peeling and slicing approximately 5 pounds of apples and mixing them with lemon juice, sugars, flour, and spices in a skillet.
  3. Cook over medium heat until the apples are tender (about 20 minutes) before cooling.
  4. Roll out your pie crust into a deep dish and fill it with the cooled apple mixture.
  5. Top with another crust, crimp edges, and cut vents if desired.
  6. Brush the top crust with milk or beaten egg before baking for 15 minutes at high heat; then lower to 350°F and bake until golden brown.
  7. Allow to cool for about four hours before slicing.
