  • ½ teaspoon salt
  • ½ cup whole milk, warmed
  • 2 large eggs
  • ¼ cup unsalted butter, melted
  • 2 cups whole milk for pastry cream
  • 4 large egg yolks
  • ¼ cup cornstarch
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a bowl, combine flour, sugar, yeast, and salt. In another bowl, whisk warmed milk, eggs, and melted butter. Gradually add to dry ingredients to form a soft dough.
  2. Knead until smooth and let it rise in a greased bowl covered with a towel until doubled in size (about 1 hour).
  3. While the dough rises, prepare the pastry cream by heating milk and sugar in a saucepan. Whisk egg yolks and cornstarch together; temper with hot milk mixture before returning to heat until thickened.
  4. Roll out the risen dough and cut into circles. Let them rise for another 30 minutes.
  5. Heat vegetable oil to 350°F (175°C) and fry dough circles until golden brown on both sides. Drain excess oil.
  6. Fill each bombolone with cooled pastry cream using a piping bag and dust generously with powdered sugar before serving.
