  • ¾ cup peach preserves
  • 2 tablespoons apple cider vinegar
  • 4 salmon fillets (about 1½ pounds)
  • 2 medium peaches (thinly sliced)
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons garlic (minced)
  • 1 ½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, apple cider vinegar, olive oil, soy sauce, Dijon mustard, minced garlic, salt, black pepper, and red pepper flakes.
  2. Reserve half of the marinade for glazing later. Marinate salmon fillets in the remaining mixture for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Sear marinated salmon fillets skin-side up for about 2-3 minutes.
  5. Flip salmon to skin-side down and add sliced peaches around them in the skillet.
  6. Pour reserved marinade over salmon and peaches; bake for 12-15 minutes until salmon reaches an internal temperature of 145°F (63°C).
  7. Serve warm garnished with fresh parsley.
