  • 2 gala apples (peeled, cored, diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar or honey
  • 2 tablespoons butter (chopped)
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans or walnuts
  • 1/4 cup dried cranberries

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar or honey.
  3. Add salt and black pepper; mix well.
  4. Transfer the mixture to a baking dish and distribute chopped butter on top.
  5. Cover with foil and bake for 15 minutes.
  6. Remove from the oven; stir in raisins, cranberries, and nuts. Cover again and bake for another 15 minutes until everything is tender.
