  • 1 garlic head
  • 30 grams olive oil
  • 50 grams butter
  • 90 grams warm milk
  • 7 grams active dry yeast
  • 25 grams honey
  • 200 grams all-purpose flour
  • 50 grams bread flour
  • 20 grams milk powder (optional)
  • 25 grams butter (for mixing)
  • 2 egg yolks
  • 1 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 200 grams mozzarella cheese
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Roast the garlic by drizzling it with olive oil and wrapping it in foil. Bake for about 2 hours until soft.
  3. Mix roasted garlic with softened butter and parsley to make garlic butter.
  4. In a bowl, combine warm milk, yeast, and honey; let sit until frothy.
  5. Mix dry ingredients (flours, sugar, optional milk powder, salt) in a bowl; add yeast mixture and mix well.
  6. Knead the dough until smooth (15-20 minutes). Let it proof in a warm place until doubled in size (about 1 hour and 30 minutes).
  7. Roll out dough, spread garlic butter, sprinkle cheese, roll tightly into a log, then cut into portions.
  8. Let rolls proof again for 30 minutes on a baking sheet lined with parchment paper.
  9. Brush with egg wash and bake for 20-25 minutes until golden brown.
