  • 10g fresh yeast
  • 3 large eggs
  • 2/3 cup unsalted butter
  • 1 cup whole milk
  • 1 vanilla pod
  • 2 egg yolks
  • 3 tablespoons cornstarch
  • Mini chocolate chips

Instructions

  1. In a stand mixer, combine flour, sugar, salt, and crumbled yeast; mix briefly.
  2. Add beaten eggs and knead the mixture for about 2-3 minutes, then gradually incorporate softened butter until dense and slightly sticky.
  3. Cover the dough and let it rise in a warm place for about 2 hours or until doubled in size.
  4. For the custard, heat milk and butter with a vanilla pod until bubbling. Whisk egg yolks, sugar, cornstarch, and flour together; slowly add hot milk while whisking. Return to heat until thickened.
  5. Roll out brioche dough, spread cooled custard on half, sprinkle chocolate chips, fold over, cut into eight pieces, and let rise again for about 2 hours.
  6. Preheat oven to 350°F (180°C), brush each brioche with beaten egg mixture, bake for 10-12 minutes until golden brown.
  7. Prepare sugar syrup by boiling water and sugar together; glaze each brioche post-baking.
