  • ½ tsp espresso powder
  • ½ cup olive oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 cup ripe bananas (mashed)
  • ½ cup dark chocolate chips
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with olive oil or line with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, salt, and espresso powder.
  3. In another bowl, mix olive oil, brown sugar, granulated sugar, eggs, vanilla extract, sour cream, and mashed bananas until well combined.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Add chocolate chips (dusted with flour) to the batter and gently mix.
  6. Pour the batter into the prepared loaf pan and top with sliced bananas and a sprinkle of granulated sugar.
  7. Bake for about 55 minutes or until a toothpick comes out clean. Let cool before slicing.
