  • 2 cups warm water (about 110℉)
  • 2 tsp active dry yeast
  • 1 tsp white granulated sugar
  • 4 cups bread flour
  • 1 ½ tsp salt
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter (melted)
  • 6 tbsp brown butter
  • ⅓ cup light brown sugar
  • 2 tsp cinnamon
  • 1 cup powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 2 ½ tbsp milk (adjust for consistency)

Instructions

  1. In a small bowl, combine warm water and sugar. Sprinkle yeast on top; let sit until foamy (10-15 minutes).
  2. In a large bowl, whisk together flour and salt. Add yeast mixture and olive oil; stir until a sticky dough forms.
  3. Lightly coat dough with olive oil, cover with plastic wrap, and refrigerate for at least 12 hours.
  4. Grease a baking pan and melt butter in it. Deflate dough gently and place it into the pan. Cover and let rise in a warm spot for about 1½ to 2 hours.
  5. Preheat oven to 450℉. Make brown butter by melting butter until golden brown; mix in brown sugar and cinnamon.
  6. Dimple risen dough with wet fingers and drizzle cinnamon-butter mixture over it.
  7. Bake for 20-25 minutes until golden brown; cool slightly before glazing.
  8. Whisk powdered sugar, milk, and vanilla to create icing; drizzle over warm focaccia.
