  • 45 pound bone-in, skin-on turkey breast
  • 1/2 cup unsalted butter, softened
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Prepare the herb butter by mixing softened butter with citrus zests, fresh herbs, garlic, salt, and pepper.
  2. Pat the turkey breast dry and lift the skin gently to spread half of the herb mixture beneath it. Rub remaining butter over the skin.
  3. Place quartered onions in a roasting pan, add citrus slices on top, then set the turkey breast over them.
  4. Pour chicken broth into the pan for moisture. Preheat oven to 350°F (175°C) and roast for approximately 1 hour 40 minutes until internal temperature reaches 165°F (74°C), basting occasionally.
  5. Let rest for 15-20 minutes before slicing; serve with your favorite sides.
