  • 3 1/2 lbs beef chuck, cut into 2-inch pieces
  • 4 tablespoons unsalted butter
  • 1 yellow onion, chopped
  • 3 large carrots, peeled and chopped
  • 5 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 cups bold apple vinegar
  • 2 cups beef stock
  • Fresh thyme and bay leaves
  • 16 oz cremini mushrooms, quartered
  • 10 oz frozen pearl onions

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large Dutch oven over medium-low heat, melt 2 tablespoons of butter and add the beef pieces to sear until browned on all sides. Remove and set aside.
  3. In the same pot, add remaining butter, then sauté onions and carrots for about 3 minutes. Stir in garlic and tomato paste; cook for an additional 3 minutes.
  4. Deglaze the pot with apple vinegar while scraping up any brown bits. Add beef stock and return the browned beef to the pot along with thyme and bay leaves.
  5. Cover tightly and transfer to the oven; cook for about 2½ hours.
  6. In a skillet, sauté mushrooms until browned; add pearl onions until golden. Mix into the stew during the last hour of cooking.
  7. Allow to rest for half an hour before serving.
