  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy; add eggs one at a time along with vanilla and coconut extracts.
  4. Gradually combine dry ingredients with coconut milk until smooth.
  5. Pour batter into pans and bake for 25–30 minutes until golden brown; cool completely.
  6. For frosting, beat cream cheese with powdered sugar; whip heavy cream separately then fold into the cream cheese mixture.
  7. Assemble layers with frosting in between; frost the outside and top with shredded coconut.
  8. Chill in the refrigerator for about an hour before serving.
