  • 5 eggs
  • 1/2 cup powdered sugar
  • 8 oz mascarpone cheese
  • 1/2 cup coconut cream
  • 1 cup heavy cream
  • 14 oz sweetened condensed milk
  • 13.5 oz coconut milk
  • 12 oz evaporated milk
  • 1/2 cup alcohol-free vanilla extract
  • 1 tsp cinnamon
  • 2 cups coconut flakes
  • 24 ladyfingers

Instructions

  1. Separate the egg yolks and whisk them with powdered sugar until pale.
  2. Mix in mascarpone cheese, coconut cream, and half of the coconut milk.
  3. In another bowl, whip heavy cream with remaining powdered sugar until stiff peaks form and fold into the mascarpone mixture.
  4. Chill the cream mixture while preparing the soaking mixture by combining condensed milk, evaporated milk, remaining coconut milk, vanilla extract, and cinnamon.
  5. Lightly dip ladyfingers in the soaking mixture and layer them in a pan.
  6. Spread half of the cream mixture over the ladyfingers and sprinkle with coconut flakes.
  7. Repeat layering with more dipped ladyfingers, remaining cream, and top with additional coconut flakes.
  8. Dust with cinnamon and refrigerate for at least 12 hours before serving.
