  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • 1 cup corn flakes
  • 1 cup pecans (toasted)
  • 1/2 cup coconut flakes
  • 1 (6-oz) cup peanut butter chips
  • 1 (6-oz) cup semi-sweet chocolate chips

Instructions

  1. Toast chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant.
  2. In a large bowl, beat softened butter until light and fluffy.
  3. Add white and brown sugars; mix well. Then incorporate eggs and vanilla extract.
  4. Combine flour, salt, baking powder, and baking soda; gently stir into wet mixture.
  5. Fold in oats, corn flakes, toasted pecans, and coconut until evenly distributed.
  6. Add peanut butter chips and chocolate chips; mix just until combined.
  7. Chill dough in the fridge for at least 1 hour before baking.
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Scoop dough using a 1/4 cup measure onto the prepared sheets; space them apart.
  10. Bake for 12–14 minutes until golden on edges but shiny in center.
