  • 1 medium head of green cabbage, finely shredded
  • 2 medium apples (Honeycrisp or Fuji), cored and diced
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Shred the cabbage into thin slices and place in a large bowl.
  2. Core and dice the apples; add them to the cabbage.
  3. Mix in the dried cranberries and optional nuts.
  4. Chop fresh parsley and add to the bowl.
  5. In another bowl, whisk together mayonnaise, apple cider vinegar, honey (or maple syrup), Dijon mustard, celery seeds, salt, and pepper.
  6. Pour the dressing over the cabbage mixture and toss until well combined.
  7. Cover and refrigerate for at least 30 minutes before serving.
