  • 1 cup fresh cranberries
  • 2 medium apples (e.g., Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes clean, poke holes in them with a fork, and bake directly on the oven rack or on a foil-lined baking sheet for about 45 minutes, until tender.
  2. Once baked, cool slightly, then cut each potato in half lengthwise and scoop out the flesh into a mixing bowl, leaving some around the edges.
  3. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt to the bowl; mix until well combined.
  4. Spoon the mixture back into each potato skin and place them on a baking sheet. Bake again at 350°F (175°C) for 15-20 minutes until heated through.
