  • 4 medium-sized sweet potatoes
  • 1 cup fresh cranberries
  • 2 medium apples (Granny Smith or Honeycrisp)
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • A pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes, prick them with a fork, and bake them directly on the oven rack or on a lined baking sheet for about 45 minutes until tender.
  2. Once cool, slice the sweet potatoes in half lengthwise and scoop out most of the flesh into a mixing bowl. Add cranberries, chopped apples, brown sugar, cinnamon, butter, and salt; mix well.
  3. Spoon the mixture back into each sweet potato half generously and place them back on the baking sheet. Bake at 350°F (175°C) for another 20 minutes.
  4. Allow them to cool slightly before serving. Top with extra cranberries or nuts if desired.
