  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Chopped fresh parsley for garnish

Instructions

  1. Poke each potato with a fork and microwave for 8 minutes total, flipping halfway through.
  2. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Toss microwaved potatoes with olive oil, salt, and pepper until evenly coated.
  4. Smash each potato to about 3/8" thickness using the bottom of a glass.
  5. Bake for 12 minutes total, flipping halfway through until crispy and golden.
