  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • ½ cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Season chicken with salt, pepper, garlic powder, and Italian seasoning. Heat olive oil in a skillet and sear chicken for 5–6 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, melt butter and sauté minced garlic for 30 seconds. Add orzo and toast for 1–2 minutes.
  3. Stir in sun-dried tomatoes and chicken broth; bring to a simmer. Cover and cook for about 10 minutes until orzo is tender.
  4. Add heavy cream and Parmesan cheese; stir until smooth. Fold in chopped spinach until wilted.
  5. Return chicken to the skillet; simmer for an additional 2 minutes before serving.
