  • 3 tbsp Greek yogurt
  • 1 tsp Dijon mustard
  • 2 tbsp lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • 12 garlic cloves (minced)
  • ¼ tsp black pepper
  • Pinch sea salt

  • Oil (for frying)
  • ⅓ cup all-purpose flour
  • ¾ tsp smoked paprika
  • 2 eggs
  • ¾ cup panko crumbs
  • ¼ cup breadcrumbs
  • 1 tsp dried parsley
  • ½ tsp ground black pepper
  • ½ tsp sea salt
  • ½ tsp dried oregano
  • 1 tsp garlic powder
  • 2 romaine hearts (chopped)
  • 12 French baguettes

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, lemon juice, Parmesan cheese, garlic, black pepper, and sea salt until smooth. Reserve some dressing to mix with chopped romaine.
  2. Season chicken cutlets with salt and pepper. Set up a breading station with flour mixed with salt and smoked paprika, whisked eggs, and panko mixed with breadcrumbs and dried parsley, spices, and grated Parmesan cheese.
  3. Heat oil in a frying pan over medium heat. Dredge each cutlet through the flour mixture, then egg, followed by the breadcrumb mixture. Fry until golden brown on both sides (about 4-5 minutes).
  4. Slice baguettes open and spread reserved Caesar dressing inside. Layer with crispy chicken cutlet and dressed romaine salad before serving.
