Crispy Smashed Carrots are a delightful side dish that combines the natural sweetness of carrots with a savory garlicky crunch.   • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil carrot rounds in salted water for about 10–12 minutes until fork-tender. Drain and let cool slightly.
  3. On a baking sheet, gently smash each carrot round using the bottom of a glass.
  4. Drizzle with olive oil, then season with garlic powder, smoked paprika, salt, pepper, and top with grated Parmesan.
  5. Roast for 20–25 minutes, flipping halfway through until golden brown and crispy.
  6. Garnish with freshly chopped parsley before serving.
