  • 3 cups cooked white or brown rice
  • 1 cucumber (diced)
  • 1 large avocado (diced)
  • ¼ cup chopped cilantro
  • ¼ cup soy sauce
  • ¼ cup sugar
  • 3 tbsp fruit vinegar or broth (replacement for mirin)
  • ¼ cup mayo
  • 1 tbsp Sriracha
  • 1 cup Panko breadcrumbs
  • ¼ cup olive oil

Instructions

  1. Cook the rice according to package instructions; set aside.
  2. In a small bowl, whisk together soy sauce, sugar, and fruit vinegar or broth for the sauce.
  3. In serving bowls, layer cooked rice followed by diced imitation crab, cucumber, avocado, and cilantro.
  4. Drizzle with sauce and top with spicy mayo (mayo mixed with Sriracha) and Panko breadcrumbs.
