  • 67 medium Yukon gold potatoes
  • ½ white or yellow onion
  • 2 tablespoons salted butter
  • ¼ cup all-purpose flour
  • 1 ½ cups unsweetened almond milk
  • 8 ounces sharp cheddar cheese
  • ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • Freshly ground black pepper
  • ½ cup Gruyere cheese (or more sharp cheddar)
  • ¼ cup grated Parmesan

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Spray a 2-quart baking dish with nonstick spray. Arrange sliced potatoes in rows, layering onion slices in between.
  3. In a saucepan, melt butter over medium heat; whisk in flour and almond milk until smooth. Simmer until thickened.
  4. Stir in cheddar cheese, garlic powder, salt, and pepper; mix until blended.
  5. Pour sauce over potatoes and onions evenly.
  6. Cover with foil and bake for 45 minutes; uncover and add Gruyere and Parmesan cheese.
  7. Bake for another 30-45 minutes until golden brown and fork-tender.
  8. Garnish with fresh parsley before serving.
