  • all-purpose flour
  • baking powder
  • baking soda
  • ground cinnamon
  • salt
  • sugar
  • eggs
  • buttermilk (or non-dairy milk with lemon juice)
  • vegetable oil (or melted coconut oil)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a loaf pan with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, ground cinnamon, salt, and sugar.
  3. In another bowl, combine eggs, buttermilk (or non-dairy alternative), and vegetable oil until mixed well.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until just combined.
  5. For the cinnamon swirl topping, mix extra sugar with ground cinnamon in a small bowl. Layer half of the batter in the prepared pan, sprinkle half of the cinnamon mixture on top, then add remaining batter followed by more topping.
