  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips (divided)

Instructions

  1. Preheat your oven to 350°F and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt.
  3. In a large mixing bowl, combine the eggs, melted butter, oil, brown sugar, and vanilla until smooth.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour the batter into the prepared loaf pan and sprinkle with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out mostly clean.
  7. Let cool in the pan for about 15 minutes before transferring to a wire rack.
