  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon flaky sea salt

Instructions

  1. In a large mixing bowl, dissolve the yeast and honey in warm water. Wait for about 5 minutes until bubbles form.
  2. Mix in flour, salt, and olive oil to create a sticky dough. Cover with a kitchen towel and let it rise in a warm spot for 45-60 minutes until doubled in size.
  3. Preheat the oven to 375°F (190°C) and grease a muffin tin with olive oil.
  4. Spoon the risen dough into muffin cups, filling each about three-quarters full.
  5. Drizzle olive oil on top of each muffin and sprinkle with rosemary, garlic, and flaky sea salt.
  6. Bake for 18–20 minutes until golden brown, rotating the pan halfway through for even baking.
  7. Cool slightly in the tin before transferring to a wire rack.
