  • 8 oz. dry rotini pasta
  • 9 oz. hard turkey slices, chopped
  • 6.5 oz. turkey pepperoni, chopped
  • 1 cup canned artichoke hearts, drained & quartered
  • 2 cups cherry tomatoes, halved
  • 1 cup olives, pitted & halved
  • ½ cup pepperoncini, sliced
  • 8 oz. mozzarella pearls
  • ¼ cup red onion, sliced thin
  • â…“ cup fresh basil, sliced thin
  • ½ cup olive oil
  • ¼ cup red apple vinegar
  • 2 cloves garlic, minced
  • 1 Tbsp. Italian seasoning
  • ¼ tsp. red pepper flakes
  • Salt & black pepper, to taste

Instructions

  1. Cook 8 oz of rotini pasta according to package directions. Drain and cool completely.
  2. In a bowl, whisk together ½ cup olive oil, ¼ cup red apple vinegar, 2 minced garlic cloves, 1 tbsp Italian seasoning, red pepper flakes, salt, and black pepper.
  3. Chop turkey slices and turkey pepperoni into bite-sized pieces. Halve cherry tomatoes, slice olives and red onion, and thinly slice fresh basil.
  4. Combine cooled pasta with all ingredients in a large bowl. Pour dressing over the top and toss to coat.
  5. Chill for at least 30 minutes before serving to enhance flavors.
