  • 8 oz rotini pasta
  • 2 cups corn (fresh or frozen; grilled preferred)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cheese (cotija or feta)
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini in salted boiling water according to package instructions until al dente. Drain and rinse under cold water.
  2. If using fresh corn, grill until charred; let cool and cut off kernels. Thaw frozen corn if using.
  3. In a large bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn, crumbled cheese, cilantro, and green onion to the bowl. Toss gently to combine.
  5. Taste and adjust seasoning as needed. Chill for at least 30 minutes before serving.
  6. Garnish with additional cheese, cilantro leaves, and a sprinkle of chili powder before serving.
