  • Salt & pepper (to taste)
  • 1 cup unsalted butter (softened)
  • 1 tablespoon fresh sage (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 tablespoon fresh rosemary (chopped)
  • 4 cloves garlic (minced)
  • 1 lemon (halved)
  • Fresh herbs for stuffing

Instructions

  1. Remove the turkey from the fridge and let it sit at room temperature for at least an hour.
  2. Preheat your oven to 450°F. Adjust one rack to the bottom third of the oven.
  3. Make the herb butter by mixing softened butter, chopped herbs, minced garlic, salt, and pepper in a bowl.
  4. Pat the turkey dry using paper towels, season generously with salt and pepper inside and out.
  5. Stuff the cavity with halved lemon, fresh herbs, and peeled garlic cloves.
  6. Rub the herb butter all over the turkey skin.
  7. Place the turkey breast-side up on a rack in a roasting pan, reduce oven temperature to 350°F, and roast for about three hours or until internal temperature reaches 165°F.
  8. Let the turkey rest for at least 20 minutes before carving.
