  • 2 whole oranges
  • ⅔ cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey for glaze
  • ½ cup fresh orange juice for glaze

Instructions

  1. Simmer whole oranges in water for about an hour until tender. Drain and blend until smooth.
  2. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
  3. In a mixing bowl, combine blended oranges, honey, eggs, almond flour, ground pistachios, baking soda, and vanilla extract until smooth.
  4. Pour mixture into the prepared pan and bake for approximately one hour or until a toothpick comes out clean.
  5. For the glaze, heat honey and orange juice in a pot until reduced by half; cool slightly before brushing onto the warm cake.
  6. Allow the cake to cool completely before serving.
