  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth
  • 2 large yellow onions (thinly sliced for topping)
  • Vegetable oil for frying
  • ¼ cup (½ stick / 57 g) unsalted butter (melted)
  • ¼ cup (½ stick / 57 g) unsalted butter
  • ¼ cup (31 g) all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • ½ cup (122.5 g) whole milk (room temperature)
  • ½ teaspoon kosher salt (for topping)

Instructions

  1. Preheat your oven to 350°F. Prepare a 9×13-inch baking dish by spraying it with nonstick spray.
  2. In a skillet over medium heat, melt half of the butter and sauté diced onion until translucent.
  3. In a large bowl, combine thawed hash browns, melted butter, cheddar cheese, sour cream, sautéed onions, garlic, flour, chicken broth, and milk until well mixed.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. In another pan, heat vegetable oil over medium-high heat and fry thinly sliced onions until golden brown and crispy.
  6. Bake the casserole uncovered for about 50 minutes until bubbly and golden brown. Top with crispy onions just before serving.
