  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • ½ cup beef broth (or vegetable broth for a vegetarian version)
  • 4 large Yukon Gold potatoes, sliced ¼-inch thick
  • 1 tablespoon butter (for greasing)
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar, or mozzarella)
  • ½ cup Parmesan cheese, grated
  • 1 cup heavy cream or whole milk
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • Fresh thyme sprigs (for garnish)
  • Extra Parmesan cheese (optional)
  • Crispy fried onions (optional, for extra crunch!)

Instructions

  1. Start by melting the butter and olive oil in a large skillet over medium heat. Add the sliced onions along with salt and sugar (if using). Cook them slowly until they turn golden brown and sweet—this usually takes about 20-25 minutes. Stir occasionally.
  2. Slice your Yukon Gold potatoes into thin rounds. The uniform thickness helps them cook evenly. Once all your potatoes are prepped, set them aside while we get back to those lovely onions.
  3. Grease a baking dish with butter. Layer half of the potato slices at the bottom of the dish. Spread half of the caramelized onions on top of the potatoes, sprinkle some garlic powder and thyme, then add half of both cheeses over everything. Repeat these layers with the remaining potatoes and onions.
  4. In a mixing bowl, combine heavy cream (or milk), salt, black pepper, and fresh thyme leaves. Pour this mixture evenly over the layered potatoes and onions. Top with extra Parmesan if desired. Cover with foil and bake in a preheated oven at 375°F (190°C) for about 45 minutes.
  5. After 45 minutes, remove the foil and let it bake uncovered for another 15-20 minutes until golden brown and bubbly on top.
