  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth (or vegetable broth)
  • Fresh thyme leaves

Instructions

  1. Sauté sliced onions in butter and olive oil over medium heat until caramelized (20-30 minutes). Season with salt, pepper, and optional sugar.
  2. Slice Yukon Gold potatoes into ¼-inch rounds and grease a baking dish with butter.
  3. Layer half of the potato slices, followed by half of the caramelized onions, then sprinkle with Gruyère cheese. Repeat layers.
  4. Whisk together heavy cream (or milk), Parmesan cheese, salt, pepper, and thyme leaves; pour over layered ingredients.
  5. Cover with foil and bake at 350°F (175°C) for 45 minutes. Remove foil and bake an additional 15-20 minutes until golden brown.
