  • 16 ounces small button mushrooms
  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped or crushed
  • 1 medium onion, minced
  • 1/2 cup chicken stock or white grape juice
  • Zest from 1 medium lemon
  • 1 tablespoon lemon juice
  • 4 tablespoons butter (divided)
  • Kosher salt or sea salt (to taste)
  • Fresh cracked black pepper (to taste)
  • 2 tablespoons chopped parsley

Instructions

  1. Clean the mushrooms and trim any dried ends. Keep them whole if small or cut larger ones in half.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sauté until golden brown for about 3-5 minutes.
  3. Add 2 tablespoons of butter, followed by the minced onions and garlic. Sauté until caramelized (another 3-5 minutes).
  4. Pour in chicken stock or grape juice along with lemon zest, lemon juice, and chili flakes. Simmer for about 2 minutes until slightly reduced.
  5. Stir in the remaining butter and parsley, season with salt and pepper, then serve warm.
