  • 2.53 kg (56 lb) bone-in turkey breast, skin on
  • 150 g (5 oz) unsalted butter, softened
  • 12 garlic cloves, smashed
  • Fresh herbs: rosemary, sage, thyme, parsley
  • Salt and black pepper

Instructions

  1. Remove the turkey from the fridge 45 minutes before cooking.
  2. Preheat your oven to 200°C (390°F).
  3. Place smashed garlic and fresh herbs in a baking dish.
  4. In a bowl, mix together softened butter, minced garlic, fresh herbs, salt, and pepper.
  5. Loosen the turkey skin and smear two-thirds of the herb butter under it.
  6. Flip the turkey upside down and spread remaining butter on the underside.
  7. Position the turkey skin-side up in the baking dish on top of the herbs.
  8. Roast in the preheated oven until cooked through (about 75 minutes), basting halfway if desired.
