  • 1 large bulb of garlic
  • 1.3 kg baking potatoes
  • 75 g butter (30 g melted)
  • 2 tbsp heavy cream
  • 60 g freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil, salt, and pepper to taste

Instructions

  1. Roast the Garlic: Cut the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 180C for 50-60 minutes until soft.
  2. Cook the Potatoes: Peel and dice the potatoes. Boil in salted water until fork-tender.
  3. Make the Mash: Drain potatoes, then mash with melted butter, cream, roasted garlic, Parmesan, salt, and pepper. Stir in egg yolks until smooth.
  4. Pipe the Duchesses: Transfer mixture to a piping bag fitted with a star tip and pipe onto a parchment-lined baking tray.
  5. Bake: Drizzle with melted butter and bake at 200C for 15-20 minutes until golden brown.
  6. Serve: Garnish with fresh parsley and additional Parmesan before enjoying.
