  • 1 large bulb of garlic
  • 1.3 kg baking potatoes
  • 5 tbsp butter (2 tbsp melted)
  • 2 tbsp heavy cream
  • 60g freshly grated Parmesan cheese
  • 4 large egg yolks
  • Fresh parsley (for garnish)
  • Olive oil, salt, and pepper

Instructions

  1. Roast the garlic: Drizzle olive oil on the sliced bulb of garlic, wrap in foil, and roast at 180°C for about 50-60 minutes until soft.
  2. Cook potatoes: Peel and chop the baking potatoes, boil in salted water until fork-tender (15-20 minutes), then drain and steam dry for 5 minutes.
  3. Mash: Combine cooked potatoes with butter, cream, Parmesan, roasted garlic, salt, and pepper. Mix in egg yolks one at a time until smooth.
  4. Pipe: Fill a piping bag with the potato mixture and pipe swirled shapes onto a lined baking tray.
  5. Bake: Brush with melted butter and bake at 200°C for 15-20 minutes until golden brown.
  6. Serve: Garnish with fresh parsley and additional Parmesan before serving.
