  • 2 tbsp extra-virgin olive oil
  • 1 large yellow onion, chopped
  • ½ tsp sea salt
  • 1 butternut squash, peeled, seeded, and cubed
  • 3 garlic cloves, chopped
  • 1 tbsp fresh sage, chopped
  • ½ tbsp rosemary, minced
  • 1 tsp fresh ginger, grated
  • 34 cups vegetable broth
  • Black pepper to taste
  • Parsley, for garnish
  • Toasted pepitas, for garnish
  • Crusty bread, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions with sea salt until softened.
  2. Add cubed butternut squash and cook for about 8–10 minutes until lightly browned.
  3. Stir in garlic, sage, rosemary, and ginger; cook for about 30 seconds until fragrant.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for around 25 minutes until squash is tender.
  5. Let cool slightly then blend until smooth. Adjust consistency with more broth if needed.
  6. Taste and season with additional salt or black pepper before serving hot. Top with parsley and toasted pepitas.
