- 2.5 lbs yellow or Yukon gold potatoes
- 2 cups chicken broth (or vegetable broth)
- ½ cup olive oil
- ½ cup lemon juice
- 5 cloves garlic (minced)
- 1 tbsp dried oregano
- ½ tbsp paprika
- 1 tbsp salt
- Preheat your oven to 400°F.
- Peel and cut the potatoes into thick wedges or cubes.
- In a roasting pan, combine the potato pieces with chicken broth, olive oil, lemon juice, minced garlic, oregano, paprika, and salt. Toss well to coat.
- Cover the pan with foil and roast for 40 minutes.
- Remove from the oven, toss the potatoes again, cover, and roast for another 25 minutes.
- Uncover and roast for an additional 15 minutes until golden brown.
