  • 2.5 lbs yellow or Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and cut the potatoes into thick wedges or cubes.
  3. In a roasting pan, combine the potato pieces with chicken broth, olive oil, lemon juice, minced garlic, oregano, paprika, and salt. Toss well to coat.
  4. Cover the pan with foil and roast for 40 minutes.
  5. Remove from the oven, toss the potatoes again, cover, and roast for another 25 minutes.
  6. Uncover and roast for an additional 15 minutes until golden brown.
