  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 cup corn kernels (fresh or frozen)
  • Optional: diced tomatoes and shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F (200°C). Pierce each sweet potato with a fork and bake on a parchment-lined baking sheet for 40-50 minutes until tender.
  2. In a skillet, heat olive oil over medium heat. Sauté onion for 3-4 minutes until softened.
  3. Add garlic and bell pepper; cook for another 2-3 minutes.
  4. Stir in ground turkey; cook for about 6-8 minutes until browned.
  5. Mix in cumin, chili powder, salt, pepper, corn (and diced tomatoes if using); cook for an additional 2-3 minutes.
  6. Slice baked sweet potatoes open lengthwise and fluff the insides.
  7. Fill each potato half with the turkey mixture. Top with cheese if desired and bake for another 5-7 minutes until melted.
